The TOS (The Other Side) distillery was created in 2017. Located in Aix Noulette in the Hauts de France region, from the outset it has focused on distilling single malt whisky from barley grown and malted mainly in the region. The distillery uses a 1200-liter copper Holstein still, which can be operated in one or two passes. The distillery benefits from the brewers' know-how to distill mashes that are perfectly mastered in their brewing and fermentation, which lasts 7 days. Ageing in the cellar takes place mainly in ex-bourbon barrels, but the distillery also uses new oak, ex-sherry and port casks. And the result is whiskies of great aromatic complexity from their earliest years, rooted in their region where they enjoy a fine reputation and ready to conquer the curious as well as the demanding connoisseurs.
