La Blanche Bio comes from a specific plot of the estate’s orchards located in Le Hiautre, in Gonneville-sur-Honfleur. It was produced from over 20 historic varieties of cider apples. This high-stem orchard, farmed organically since 2013, is a classic example of an orchard where cows and apple trees coexist.
Collected from the ground over a period of more than two months, the apples were washed, sorted, and grated, then pressed gently to extract no more than 650 liters of juice per ton of apples. The apple must then fermented for four months before being double-distilled in a pot still.
After distillation, the spirit was placed in stainless steel vats and gradually reduced to reach its optimal balance of alcohol strength.
