The ancestor of wheat, whose origins date back thousands of years to the Alps, spelt is the emblematic cereal of the Mediterranean region. Long forgotten by the milling world before a handful of bakers brought it back into fashion in the early 2000s, and non-existent in the world of spirits, it was enough to make us want to sow a few hectares of it on the Gabert climate in 2011! After last year's S12U23, here's whisky from this plot aged for another year. With S12U24 , we offer you an ascending tasting, the beginning of a path that will lead us to discover the fabulous potential of spelt whisky!
