    Epistémè R15C25 Carré is the first of the twin expressions of the R15C25 exploration, an experiment into the influence of the same spirit's journey through two distinct sets of casks. Originally, the 2 expressions of R15C25 come from the same parcel distillate and vintage, whisky created from the same raw material: rye (Caroas variety), harvested on the Gabert climate in 2015 (“R15”). After leaving the still in July 2016, the distillate undergoes two distinct maturation processes, resulting in two expressions of Rye Whisky with specific aromatic palettes 9 years later. Epistémè R15C25 Carré was aged in 2 casks - a double maturation process; first in new casks for the first few weeks, then aged for the next 9 years in Roux de Cognac. What these 2 casks have in common is the nature of their wood, French oak - Quercus Robur - characterized by a predominance of coarse grains, which bring more tannins to structure the whiskies, deploying for this first expression fresh, airy notes of spices and dried fruits.
