Crafted from locally indigenous heirloom barley farmed on-site and proofed using water from the Charente river, Evidence is a 100% organic uniquely seed-to-spirit whisky. A double distillation is made in traditional copper pot stills. A long ageing continues in very old barrels of organic cognac and finished in a prestigious Pauillac wine casks.
