This new limited edition from Rest & Be Thankful (Fox Fitzgerald Brands) is a blend of 10 barrels of Jamaican rum. Distilled in 2015 in Lluidas Vale (Jamaica), this rum is the result of a rapid fermentation (around 30 hours) in American oak vats, followed by distillation in a Forsyth-type still. The distillate was then aged for 4 years on site in Jamaica in first-fill bourbon casks before being moved to Scotland for a further 3 years. The result is a very fine light molasses rum that is both delicate and complex, with Jamaican flavours to match.
