Mount Gay has a new recipe for its Black Barrel. This dry molasses rum is distilled in a column and pot still, the distillates of which are aged separately for 3 to 7 years. The rum is then aged for 6 months, as opposed to 4 months in the previous recipe, in charred Bourbon casks. This longer finish underlines the character and robustness of the rum. There are notes of gingerbread, lychee and caramel._x000D_
