“Natural” rice is rice grown without fertilizers or agricultural chemicals, and Niida Honke Brewery makes it a point of honor to work exclusively with rice produced by contract farmers. This junmai ginjō is made from a traditional mash using wild yeast already present in the brewery and water from the Takenouchi well (hard water) near the company's rice fields. Its delicate and smooth sweetness, deep umami, and the acidity characteristic of the kimoto brewing method combine to create a perfect balance.
