Our tobalá capón is a tobalá (a wild agave usually harvested when it is 11 years old) that we leave in the ground for a further year after the flowering stem has been cut, in order to maximise the sugars present in the heart of the agave (the 'piña') when it is harvested, i.e. after 12 years. This technique, known as 'Capón', is virtually non-existent in Mexico. Ramo de Rosas is the only brand to use a Capón harvest for all its espadín and tobalá production.
