This yamahai sake has been brewed gently, using only yeasts that are indigenous to the brewery. Unpasteurised, unfiltered and undiluted, it is then aged in the brewery at room temperature. Available in limited quantities, it was produced in the small brewery of Kinoshita Shuzo, located on the coast of Japan in the Kyoto prefecture. The master-brewer is English and it is to him that we owe the use of slow fermentation methods and indigenous yeasts. With an iridescent colour, the initial nose is characterised by notes of straw and freshly fermented rice. It develops with dried fruit (hazelnut, almond, coconut) and toast, before becoming almost malty. Filled with cut hay, starch and a pinch of salt, the palate is at the same time very exotic (pineapple). Gradually it becomes spicy (ginger, cinnamon) and creamy (toffee). The nose and the empty glass evoke aromas of fino sherry (almond, walnut, pineapple).
