Senkin is a local brewery dating back to 1806. However, the two young Usui brothers have totally transformed the post-war heritage of their ancestors. They have drastically reduced production volume and returned to traditional production methods, while retaining a certain modernity in the final product. Motivated by the idea of shaking things up, they set out to develop their own formula for sake that is both sweet and sour.
